Purslane (Portulaca oleracea), also called pigweed or fatweed, is a leafy vegetable popular in Asia and Europe. It’s easy to grow and packed with nutrients like vitamins A, E, C, calcium, magnesium, potassium, and iron. Itβs also high in omega-3 fatty acids, which are usually found in fish, but purslane has more ALA and some EPA.
The plant contains antioxidants like vitamin C, A, and E, and compounds like glutathione that protect cells. Itβs also good for heart health, bone strength, and muscle function, thanks to its potassium, calcium, and magnesium content.
However, purslane has high oxalates, which could contribute to kidney stones for those with certain conditions, so consult a doctor if youβre at risk.
Purslane can be eaten raw or cooked and added to salads, soups, and stir-fries. It grows well in warm, sunny conditions, needing minimal water and thriving in nutrient-poor soils.
